The 2021 Rosé Ebullient showcases fresh and fruity aromatics. The palate is bigger and broader with a savory, almost slightly nutty note to the palate as well. The sugar level is deceptive, not quite dry, not sweet, with the fruit making it feel juicy and luscious.

Winemaker Notes: This wine’s fermentation was stopped slightly early, and cold-soaked only two days as long in order to preserve aromatics and freshness.   The blend is 70% Cab Franc, 30% Merlot. Cabernet Franc and Merlot were co-fermented together to produce a whole greater than the sum of its parts. All the fruit for this wine was grown by Sawmill Creek Vineyards on Seneca Lake.
